  • 1 cup Cottage Cheese (4% for best texture)
  • ½ cup All-Purpose Flour
  • 2 Large Eggs
  • 1 tsp Garlic Powder · ½ tsp Sea Salt

Instructions

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment.

BBQ Chicken Pizza

  • 3–4 tbsp G Hughes Sugar-Free BBQ Sauce
  • 4 oz Grilled Chicken Breast, diced
  • 2 slices Bacon, cooked and crumbled
  • ½ of a large Red Onion, thinly sliced
  • Fresh Jalapeño Slices (jarred jalapeño slices work great too)
  • 1 cup Low-Skim Mozzarella Cheese
  • Ranch drizzle: ¼ cup Greek yogurt + 1 tsp ranch seasoning
  • Optional: ½ cup fresh Pineapple Chunks

Bake for 8–10 minutes, or until the cheese is melted and bubbly, then drizzle with the yogurt ranch. Macros are for ½ the pizza with 4 tbsp BBQ sauce and the red onion; they do not include the optional pineapple. Adding the pineapple adds about 40 calories and 10g carbs.

💡 Cottage Cheese Tips

For the best texture, I recommend using 4% cottage cheese — it creates a richer flavor and a sturdier crust. Using low-fat or fat-free? No problem:

  • Simply stir everything together until combined. It doesn't need to be perfectly smooth.
  • A few small cottage cheese curds are completely normal — you won't taste them once the crust is baked.
  • The batter should be thick but spreadable, similar to a thick pancake batter. It should spread easily with a spatula while still holding its shape.
  • Because lower-fat cottage cheese contains more moisture, your crust may need an additional 3–5 minutes in the oven before adding your toppings.
  • The crust is ready when the edges are lightly golden and the center feels firm when gently touched.
